swiss chard tacos



swiss chard tacos

i got this from rick bayless's show on pbs. it is really good & fast (not counting the roasting time) & easy. who knew swiss chard could taste good in a taco?? i love mexican food. there are no specific measurements but these make about 2 tacos. rick bayless is surprisingly buff.

a couple of tomatillos
one garlic clove
a chipotle pepper from can
swiss chard with the stems cutt off
2 smallish onions, sliced
soft tacos
crumbled queso fresco
olive oil


1. roast tomatillos and garlic in a pan at 350 degrees for about an hour. let cool. place into blender with the chipotle pepper (cut off stems and scoop out seeds if you don't want it so hot) until well blended.

2. sautee onions in the olive oil until nicely browned on edges, add chard and cook until just wilted.

3. place the onion and chard on the warm taco shells, pour over with the tomatillo chipotle salsa, and top with queso fresco.

I have a bunch of swiss chard in my garden to use up, this looks like a lovely way.
